Why the X-E5 wins
The X-E5 takes it. 445g, rangefinder-style body with the viewfinder in the corner rather than the middle, 40.2 MP X-Trans V, and 7-stop IBIS — which the X-E line went without for its entire history until this one.
The corner viewfinder is the part that matters on the street. It leaves your right eye free to watch what is walking into the frame from outside it, which is most of the job. Nothing about the body reads as professional equipment, and that is the point.
Who should buy something else
It is $1,699, and it has one card slot and no weather sealing. If it rains where you shoot, the X-T5 is sealed at 557g and does not qualify as light by the 500g line this page drew.
The obvious alternative is the X100VI: fixed 23 mm f/2, hybrid optical-electronic viewfinder, and the leaf shutter that is genuinely near-silent. It missed this list on weight — 521g, just over the line — not on merit. If you are happy at one focal length, buy that instead and stop reading.

- The discontinued X-E4 at 364g is the lightest interchangeable-lens Fuji with a viewfinder, and it shares the 26.1 MP X-Trans IV sensor with bodies still sold today. No IBIS and one card slot, but for daylight street work neither is the limiting factor.
